  1. Place a large pot on your range and heat the oil. Add the coriander seeds, onions and green chilli and cook till the onions are soft.

  2. Meanwhile soak the bean thread in some warm water and snip them into 2" long pieces.

  3. Add the vegetables, tumeric powder and salt to taste. Stir constantly until all the vegetables are cooked.

  4. Drain the bean thread and add it to the vegetables stir till its completely covered in the tumeric and salt.

  5. Add enough water to cover the vegetables completely. Stir the coconut milk to remove lumps before adding.

  6. Let the gravy come to a rolling boil before removing from the heat.

  7. Garnish with chopped coriander and serve with steamed rice and Spicy Tofu Sambal.

Serves 4-6

1/4 Cabbage (cut into square pieces)
3 Carrots (cut into 1/4" circles)
10 French Beans (cut into 1" pieces)
1 Green Bell Pepper (cut into square pieces)
1 Cup of Cauliflower florets
1/2 Cup of Cilantro (chopped for garnish)
1 Green Chilli (sliced lenthwise)
1 White Onion (sliced thin)
1 Bundle of Bean thread (optional)
1 400ml can of Coconut Milk
1/2 tsp of Turmeric powder
1 tsp of Coriander seeds
3 tbsp of Olive Oil/Vegetable Oil
Salt to taste
