Rice Lebanese Style

Method

  1. Wash rice in plenty of water,

  2. Soak in warm salted water for 30 minutes

  3. Drain, keep aside in sieve.

  4. Melt ghee butter in heavy pan, add vermicelli.

  5. Stir gently, till lightly browned.

  6. Add rice, stir gently again, till rice is coated with fat.

  7. Add salt and hot water, bring to a boil.

  8. Cover, reduce heat and simmer till rice is cooked.

  9. Check in-between, adding more water if necessary.

  10. Rice should be fully cooked but not mushy.

  11. Serve hot with stew, etc.

Making time: 30 minutes (excluding rice soaking time)
Makes: 4 servings
Shelflife: Best fresh

Ingredients:
1 cup short grain or rounded rice
1/3 cup coarsely broken vermicelli
2 tbsp. rendered butter (ghee, clarified butter)
salt to taste
2 cup hot water (approx.)
