To make dressing:
Mix together vinegar, orange juice, olive oil.
Beat well with a wire whisk. Keep aside.
Check that orange does not have any seeds.
Roast pine nuts lightly in a pan, cool.
Halve olive if desired or keep whole.
Clean spinach leaves, chop off stems.
Chop coarsely into big pieces.
Mix together all ingredients except dressing and nuts, into salad bowl.
Before serving, sprinkle dressing and pine nuts, toss lightly.
