Som Tam Salad (Papaya Salad Thai style)

  1. Mix all the ingredients of the dressing together.
  2. Put papaya and other ingredients in a bowl.
  3. Pour the dressing and mix well.
  4. Cover with a cling film and chill for at least an hour so that the flavours penetrate.
  5. Serve by itself as a starter.
3 cups - hard raw papaya (grated)
1/2 cup - tender green beans (french beans, lobia or chawli) finely sliced
1/4 cup - cashew nuts (whole and roasted)
1 - tomato (deseeded and cut into 8 pieces)

For Tamarind Chilli Dressing:
2 tbsp - lemon juice
2 tbsp - sugar
2 tbsp - finely chopped coriander leaves
1 tbsp - tamarind pulp
1 tbsp - soy sauce
1 tsp - red chilli powder
some few green/ red chillies (as per taste and finely chopped)
salt to taste
