Kulcha (Stuffed)

Pre Preparation :
  1. Sieve all purpose flour(maida) with salt and baking soda.
  2. Add oil in it and mix it very well.
  3. Add buttermilk or yoghurt in it and mix it very well(if necessary add water). Make a smooth dough.
  4. Keep it in warm place for 6-8 hrs.
  5. boil potato in microwave or in pressure cooker.
  6. Mash potato and add salt ,red chilli powder ,coriender powder,garam masala,amchur chopped green chilli and coriender leaves. Mix it well.
  7. Shred the paneer and add salt,red chilli powder,coriender powder,garam masala,amchur ,chopped green chilli and coriender leaves. Mix it well.
Method :
  1. Preheat oven on 450 F.
  2. Make small rolls of dough.
  3. Roll it like chappati, put some mashed potato mixture in it and roll the chappati towards center till the edges meet.
  4. Again roll it like 3-4 inches chappati.
  5. Repeat step 3&4 for making paneer kulcha.
  6. Make 4-5 kulchas by repeating step 3&4.
  7. Apply some oil on baking tray with bursh.
  8. Place kulcha on tray one by one.
  9. Put tray on the lower rack of the oven.
  10. Bake it for 5-8 mins till it becomes light brown in color.
  11. Put some butter on it.
  12. Serve it hot with some paneer curry or with daal makhani.
Note : For making instant kulcha you can use dry yeast powder instead of baking soda and curd.If you are using yeast powder then mix yeast powder in warm milk and leave it for 10 mins.Now add it in maida and you can make kulchas after 30 mins.
4 cups All purpose flour(maida)
1 -2 teaspoon baking powder
Small quantity of vegetable oil
Salt (depending upon taste)
1 cups Buttermilk/yoghurt
1 boiled potato
shredded paneer
1 tsp red chilli powder
1/2tsp garam masala
1 tsp coriender powder
1/2 tsp amchur powder
chopped coriender leaves
2 chopped green chilli
