Method
  1. Dice the vegetables.
  2. Boil with salt and water.
  3. Keep aside 2 tbsp of grated coconut and grin the rest with red chillies.
  4. Add to vegetables with kokum and simmer for 3 minutes.
  5. Prepare seasoning with oil, mustard and curry leaves, add to vegetable mixture.
  6. Roast coconut with 1 tsp oil (extra) and add.
  7. Mix well and serve hot.

Serves: 4

Ingredients:
mixed vegetables - ½ kg (yam, curry plantain, yellow pumpkin)
coconut - ½, grated
red chilies - 3 to 4
kokum - 1 small piece
oil (coconut) - 1 tbsp
mustard - 1 tsp
cumin - 1 tsp
curry leaves - few
coconut oil - 1 tsp
salt to taste
