Mysore Mixed Vegetable Curry

Method
  1. Cut vegetables into 2 cm cubes and cook till soft.
  2. Cook vegetables.
  3. Mix with dal add salt.
  4. Roast and powder chillies, urad dal, coriander, pepper.
  5. Add to vegetables.
  6. Heat oil for seasoning; Add mustard.
  7. When it splutters add dal.
  8. When dal turns light brown, add peanuts.
  9. When they turn brown, remove from fire and add to the curry.
  10. Just before serving, crush some fried pappads and sprinkle on top.
  11. This curry has a consistency like thick cake batter. (like kootu)

Serves: 6-8

Ingredients:
snake gourd - 250 gm
ridge gourd - 250 gm
pumpkin - 250 gm
ash gourd - 250 gm
sweet potato - 250 gm
cooked toor dal (not very mushy) - 500 gm
black gram (urad) dal - 3 tbsp
poppy seeds(khus khus) - 3 tbsp
red chillies - 10 to 15
coriander seeds - 2 tsp
pepper - 2 tsp

For Seasoning:
oil orghee - 2 tbsp
mustard - 1 tsp
black gram (urad) dal - 1 tsp
peanuts - 2 tbsp

Garnish:
crushed papads
