Bihari Style Spinach

Method
  1. Blanche spinach in plenty of boiling water.
  2. When leaves become limp and bright, drain off.
  3. Hold under cold running water, till completely cooled.
  4. Grind to a smooth, thick paste add a tbsp of water, if required.
  5. Mix ginger, garlic, green chilli, salt, oil in a small bowl, till well blended.
  6. Pour over spinach, fold in till flavours are mixed into it.
  7. Garnish with chopped coriander, serve.

Ingredients:
2 bunches - fresh spinach, cleaned, destalked
1 - ginger, grated
1 clove - garlic, grated
2 - green chillies, chopped very finely
3 or 4 sprigs - fresh coriander, finely chopped
1 1/2 tbsp - mustard oil
