Crunchy Vegetables

Method
  1. Cut all the vegetables into squares.
  2. Heat oil and add the onion pieces.
  3. Saute well till it changes colour.
  4. Add green chillies and then the ginger garlic paste.
  5. Saute well for 2-3 minutes till the raw smell of the ginger garlic leaves.
  6. Add capsicum, saute well.
  7. Then add carrot and add the salt and the pepper.
  8. Mix all the vegetables together and allow to simmer together.
  9. In the meanwhile, prepare the puree, and add the ketchup to it.
  10. Mix with 1/2 cup water and add to the veggies.
  11. Cook with lid on.
  12. You can reduce the quantity of water if you want your veggies crunchier.
Ingredients:
onion - 1 big
capsicum - 1 medium
carrot - 1 medium
cauliflower - a few florettes
tomato puree - from 2 medium ripe tomatoes
slit green chillies - 3
ginger garlic paste - 1 teaspoon
tomato ketchup - 2 teaspoons
pepper - 1/2 teaspoon
water- 1/2 cup
salt to taste
