Method
  1. To make the rice, heat oil in a pan and add mustard seeds.
  2. When they start to crackle add curry leaves, ginger, green chillies and urad dal.
  3. Add this tempering to the yoghurt and mix well. Season.
  4. Add rice and chopped coriander leaves and refrigerate until cool.
  5. To make the tikkis, mix chenna with the ginger, green chilli, salt, cumin powder, chaat masala and coriander leaves.
  6. Add chana dal powder and pepper.
  7. Divide into 40 to 50 gms. portions and shape into tikkis.
  8. Heat the oil in a pan and shallow fry tikkis until golden brown.
  9. Serve hot on a bed of the yoghurt rice.
Ingredients:
For the rice:
Oil - 2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 1 sprig
Chopped ginger - 1/2 tsp
Chopped green chillies - 1/2 tsp
Urad dal - 1/2 tsp
Yoghurt - 200 ml
Salt - 1 tsp
Rice, boiled and cooled - 100 gms
Coriander leaves, chopped - 2 sprigs

For the Tikkis:

Chenna, mashed - 400 gms
Chopped ginger - 2 tsp
Chopped green chilli - 1.5 tsp
Salt - 1 tsp
Cumin powder - 1 tsp
Chaat masala - 1 tsp
Chopped coriander leaves - 1 tsp
Chana dal, roasted and powdered - 20 gms
Pepper powder - 1/2 tsp
Oil - 50 ml
