For Stuffing:
Mix coconut, amchur powder, garam masala, turmeric, red chilli powder and chopped coriander leaves add a little (1 tsp) oil or water and mix all the ingredients

  1. Vertically slit the ladies finger in 4 directions leaving the 1/2 inch edges at the bottom to enable stuff them.
  2. Fill the ladies finger withg the stuffing.
  3. Shallow fry ladies finger with lid on, on a low flame
  4. Heat 4-6 tsp oil in a pan, add cumin seeds and curry leaves, place the stuffed ladies finger and also add the left over masala.
  5. Cook with lid on till the ladies finger are cooked, you will have to turn them occassionally so that they are cooked evenly.
  6. Serve with chappati
250 g - ladies finger
1 cup - coconut
2 to 3 tsp - amchur powder
1 to 2 tsp - garam masala
1 to 2 tsp - red chilly powder
1/2 tsp - turmeric
1/4th cup - chopped coriander leaves
7 to 8 - curry leaves
1/2 tsp - cumin seeds (jeera)
salt to taste
