Achaari bhindi

Method
  1. Wash bhindi and wide dry.
  2. Now cut the bhindi length-wise from the middle.
  3. Grease a non-stick tawa.
  4. Place the bindi pieces on it.
  5. Sprinkle 1 tbsp oil and mix well.
  6. Spread the bhindi in the tawa and grill for 8 minutes.
  7. Mix lightly and grill for 2 more minutes.
  8. Now, in a small bowl put 2 tbsp oil and all the achaari spices.
  9. Microwave for 2 and a 1/2 minutes.
  10. Now add the achaari spices to the bindi and all the remaining ingredients.
  11. Mix very well.
  12. Microwave for 5 minutes.
  13. Serve hot with roti or rice.
Ingredients:
500 gm lady`s finger
1 tsp ginger-garlic paste
1/2 tsp red chilli powder
1 tsp dhania/coriander powder
1/2 dry mango powder/amchoor masala
1/2 garam masala
Salt to taste
2 tomatoes, chopped finely
1 tsp lemon juice

Achaari Spices
A pinch of hing
1 tsp saunf/fennel seeds
1/2 rai (mustard seeds)
1/2 tsp onion seeds
2 tbsp oil
