Zarda (sweet yellow rice)

Method
  1. Soak rice for 1 hour.
  2. Boil the rice with food colour.
  3. When it is 1/3 done separate the water and spread on clean cloth so that the grains do not stick to each other.
  4. Heat ghee in a pan, fry cardamom for 1-2 minutes.
  5. Add sugar and 2 tsp water, boil until sugar dissolves.
  6. Now add rice and enough water and cook on a high flame till excess water evaporates.
  7. Cover and cook for 5 minutes on slow fire.
  8. Add dry fruits and again cover for 2-3 minutes or till cooked.
  9. After cooking rice looks glossy.
Ingredients:
1 cup - basmati rice
2 tbsp - ghee
1 cup - sugar
1/2 tsp - orange colour
Dry fruits, raisins, almonds, cashewnuts, finely chopped coconut
1 tsp - cardamom, big and small
2 tsp - crumbled khoya
vark (optional)
