Kakarkkai Koora (Bitter Gourd, Andhra Style)

Method
  1. Cut bitter gourd into thin round slices.
  2. Sprinkle with some salt and keep aside for ½ hour. Squeeze out the liquid.
  3. Heat oil for deep frying and fry the bitter gourd slices till crisp.
  4. Take 3 tbsp of the oil in which the bitter gourd was fried.
  5. Add garlic, fry till brown.
  6. Add onion, fry till light brown.
  7. Add peanuts, green chili, coconut and curry leaves.
  8. Fry till coconut is light brown.
  9. Add chili and turmeric powder.
  10. Add fried bitter gourd and salt.
  11. Mix well and remove from fire.

Serves: 3-4

Ingredients:
bitter gourd - ½ kg
grated coconut - ½ cup
garlic - 2 tsp, chopped
onion - 1 ½ cup, sliced
peanuts - 2 tbsp
green chilies - 2, chopped
curry leaves - few
chili powder - 1 or 2 tsp
coriander powder - 2 tsp
oil to fry
salt to taste
