Caramel Payasam

Method
  1. Heat the cooker very well on a high flame till it gets really hot.
  2. Add 1 tbsp of sugar. Do not stir. It will start caramelizing.
  3. When it becomes dark brown, add ½ cup of hot water (beware, it will splash).
  4. Then add the milk, washed and strained rice .
  5. When the milk starts boiling well, close the cooker and put the weight.
  6. Put the flame on sim and pressurise for 25 mins.
  7. Allow the pressure to drop.
  8. Open and add the sugar, mix well.
  9. Close again and put the weight. Open after atleast 15 mins.
  10. The payasam will be pale pink in colour with a nice aroma.
Note :
It is preferable to do this in a pressure cooker or a big pressure pan to prevent overflowing of milk.
This can be prepared for festive occasions.
Ingredients:
1 litre - milk
1/3 cup (level) or ¼ cup - heaped thin variety rice (basmati or jeeraga samba)
1 cup - sugar
